Gushing, the spontaneous ebullition of beer after opening the bottle, is a serious problem for all breweries it hits. Customers condemn gushing more than most other quality failures, which makes beer almost unsellable and can cause great expenses for
breweries. Accordingly, there has been a lot of research on this topic, and though the issue is still far from being completely understood, various factors contributing to gushing could be identified.
