Citric Acid during fermentation
Is it possible to ad citric acid during fermentation in order to get a more acidic taste at the end? I want to have something like Berliner Weisse without having a mixed fermentation. I was thinking about adding acid, but perhaps the yeast will not ferment anymore. Is it possible to add during transfer? Like adding after fermentation, but before maturation.
